A good douse of salt and pepper and a shake or two of granualted garlic. <BR/><BR/>Have your oil deep and hot. I use about an inch of Canola in my cast iron skillet. Put the squash in when they immediately start to cook, turn once, and remove when they are golden. <BR/><BR/>They should be crispy on the outside and sweet and tender on the inside.
